I told my colleague that I had a great recipe for cauliflower, and she remarked that that it would really be something if I could make cauliflower taste good. Well, I have; and the recipe is below. Not only that, but I have included three preparations that will allow you take this one great recipe and morph it into three delicious meals. Who knows, maybe you will be inspired to come up with your own version.
1 – Whole head of cauliflower – I used orange cauliflower for fun and because it has a slightly buttery taste than white cauliflower.
1 Tbsp. water
3 – cloves of sliced fresh garlic
Half of a fresh lemon
½ cup – natural pecan halves – not roasted, salted, or anything else for that matter.
Olive Oil – enough to coat the skillet
2 Tbsp. – Olive Oil
Salt and fresh ground black pepper
1. Core the cauliflower (see picture).
2. Slice the cauliflower thinly (see picture).
3. In a microwave-safe bowl, add cauliflower with water and microwave on high for 2 minutes. Set aside.
5. Working in three batches – sauté the cauliflower over medium heat in the same skillet you used for the pecans and garlic. Add a little bit of olive oil to the skillet as necessary. Sauté the cauliflower until it is fork-tender and browning around the edges. Transfer each batch to the bowl with the pecans and garlic.
Preparation 1 – Enjoy the cauliflower alone as a vegetarian dish, or serve it with your favorite protein such as roasted fish, roasted chicken, pork tenderloin, or a nice steak. Save some leftovers for preparation #2.
