I’m so ready for some light and refreshing fare that evokes the spirit of spring and summer. This cod salad fits the bill perfectly. Everyone is already talking about what you should and shouldn’t eat to get into shape for swimsuit season. I’m not claiming that this salad will give you the swimsuit body (whatever that means) that you’ve always dreamed of, but it will make for a great picnic at the beach. I say throw on a sarong if your thighs bother you that much, and chow down.

The ingredients include cod, an assortment of spices, apple, onion, radishes, lemon, and mayonnaise. I think this recipe is simple because these are fairly common ingredients. There’s nothing exotic to trip you up. Not only that, but it only takes 15 minutes to prepare.
First, bake the cod and then break it apart with a fork.
While the cod is baking, chop the onion, apple, and radish.
Mix together the cod, vegetables, fruit, spices and mayo.
And that’s it. Serve the salad with whatever you want. I prefer to keep it really light and go sans bread, but if a sandwich is what you crave, go for it!
If you prefer a sandwich, but you want to avoid the bread, a cucumber sandwich is a great option. Slice a cucumber in half, scoop out the flesh of the cucumber, and stuff it with cod salad.
You can even make a great refreshing appetizer that won’t spoil dinner. I love to use cucumbers as a base for appetizers because they are less filling and more refreshing than bread, which can spoil dinner. Slice a whole cucumber with the skin on, and use a small cookie cutter to punch out the middle of each slice.
Fill the holes with cod salad, and serve on a platter with wedges of lemon. It’s simple, fast, and so good!

- 1 lb cod (not salted)
- 3 oz red onion
- 4 oz green apple
- 3 oz lemon juice
- 6 oz radishes
- 1/8 tsp. each of paprika, dry mustard, and cumin
- 1/4 cup mayonnaise
- 2 tbsp. white wine vinegar
- Salt and pepper to taste
- Preheat oven to 350° F
- Bake cod for 10 minutes. It will be opaque and easy to break apart.
- While the cod is baking, finely chop the red onion, green apple, and radishes.
- When the cod is done, break it apart with a fork, and mix it with the chopped vegetables and fruit along with the spices, mayonnaise, and vinegar.
- Add salt and pepper to taste.
